Gordon Ramsay Academy Recipe: Avocado on Toast

AVOCADO ON TOAST
Serves 2

INGREDIENTS

  • 1 avocado
  • Juice of 1 lime
  • ½ green chilli, finely chopped
  • Small handful coriander, roughly chopped
  • Pinch of sea salt
  • Gravadlax (see recipe)

METHOD

  1. Halve and stone the avocado and scoop the flesh out into a blender (or a jug with a stick blender). Squeeze in the lime juice and blitz until completely smooth.
  2. Transfer to a bowl and stir through the chilli and coriander. Season to taste, adding more lime or chilli as you like.
  3. Lightly toast a few slices of sourdough and spread the avocado mix over the toasted bread. 
  4. Lay the gravadlax salmon on top, and garnish with thinly slices radishes and cress or baby salad leaves. 
  5. Finish off with a squeeze of lime juice and serve.
